SPICY PASTA WITH SHRIMP

1/2 cup olive oil
5-6 pinky-sized dried chilies
4-5 garlic cloves, minced
1 (28 oz) can whole tomatoes, broken with a spoon
1 lb medium to large shrimp, peeled and deveined
1 (10 oz) bag prewashed spinach, stems removed
1 lb linguine, cooked according to pkg directions
3/4 cup grated parmesan cheese

In a large skillet, heat oil and chilies. Cook the chilies for several minutes, until almost blackened. Turn heat to love. With a slotted spoon, remove and discard chilies.

Let oil temperature cool slightly. Add garlic. Cook for 2-3 minutes. Add tomatoes. Cook, stirring, no more than 5 minutes.

Add shrimp and cook until they just turn pink. Add spinach and stir well. Cover and simmer 5 minutes or until spinach is rendered down. Pour over linguine. Toss with parmesan cheese.
