Grill - SMOKED PORTABELLA AND VEGETABLES

6 portabella mushrooms, cleaned
1 eggplant, sliced 1/4 inch thick
2 each zucchini and yellow squash, sliced 1/4 inch thick
1 each red and yellow bell pepper, cut into six pieces each
1/2 red onion, thickly sliced
2 cups hickory wood chips, soaked in water
2 clove garlic, minced
3/4 cup olive oil
1/3 cup balsamic vinegar
3 tbsp cilantro, chopped
1/4 tsp cayenne
Salt and pepper, to taste

Prepare grill for medium heat. Combine olive oil, cayenne and cilantro. Marinate vegetables in mixture for 1 hour and drain off oil and reserve dressing.

Soak chips and toss into grill. Once chips start to smoke, add vegetables and grill until slightly tender. Add salt and pepper, cilantro and balsamic vinegar to oil mixture and sprinkle on top of vegetables. Arrange cooked vegetables on plate with mushrooms slightly off to side. Serve immediately.
