GRILLED ASPARAGUS WITH SIMPLE VINAIGRETTE

25-30 spears fresh asparagus, bottoms trimmed off
2 tbsp olive oil
Salt and pepper, to taste
Vinaigrette
1/2 cup olive oil
1/4 cup lemon juice
1 tbsp minced garlic
Salt and pepper, to taste
Fill sink or bowl with ice and water. Bring more water to a boil in a saucepan big enough to hold the asparagus in a single layer. Drop asparagus in boiling and cook 2-3 minutes. (It should stay bright green and firm.) Immediately transfer from boiling water to ice water, stopping the cooking process. Drain and pat dry. Brush asparagus lightly with olive oil; sprinkle with salt and pepper.
Prepare vinaigrette: whisk together ingredients in a small bowl. Place asparagus on grill over medium-hot fire for 3-4 minutes, turning once. Remove to plate and drizzle with vinaigrette.
