ORANGE-ALMOND GARDEN SALAD

Dressing:
1/4 CUP salad oil
2 tbsp sugar
1/2 tsp salt
1/8 tsp pepper
2 tbsp white vinegar
3 drops hot pepper sauce

Salad:
1/4 CUP slivered almonds
2 tbsp sugar
1 head lettuce, torn into bite-sized pieces
3/4 CUP chopped fresh parsley
11 oz can mandarin orange slices, drained
2 tbsp sliced green onion

Combine all dressing ingredients in a tightly covered jar; shake well to mix. Refrigerate.

In an 8 inch skillet, combine almonds and sugar. Cook over medium heat, stirring constantly until sugar is melted and almonds are coated and lightly browned (5-8 minutes). Spread on waxed paper; cool completely.

Just before serving, in large bowl, toss together remaining ingredients, almonds and dressing. Serves 6. NOTE: You could also add 1 CUP cooked, chopped turkey or chicken. Also 1/2 CUP dried cranberries would go good with this salad.
