CAJUN PORK ROAST

2 lb loin pork roast
3 tbsp paprika
1/2 tsp cayenne
1 tbsp garlic powder
2 tsp oregano and thyme
1/2 tsp salt, white pepper and cumin
1/4 tsp nutmeg

Combine all seasonings and rub will over all surfaces of roast. Place roast in shallow pan and roast at 350 for about an hour, until internal temperature is 155 to 160 degrees F. Remove form oven, let rest 5 to 10 minutes before slicing. Serves 6
