SUMMER GARDEN TART

1 refrigerated pie crust
1 1/2 cups shredded mozzarella cheese, divided
3/4 cup ricotta cheese
1 medium zucchini, diced
1 (6 1/2 oz) jar pimientos, drained and diced
1/4 cup chopped fresh basil

Preheat oven to 375. Place crust on a 12 inch pizza pan.

In a small bowl, combine 1 1/4 cups mozzarella cheese, ricotta cheese, zucchini and pimiento; mix well. Spread mixture over crust, leaving a 1 inch border. Fold the edge of the crust up over the edge of the cheese filling and flute, if desired. Bake for 35-40 minutes or until crust is golden brown.

Mix remaining cheese and basil together and sprinkle over hot tart. Allow to sit 10 minutes before serving.
