STRAWBERRY NAPOLEONS

1 pkg frozen puff pastry sheets, thawed
3/4 cup sugar
2 tbsp cornstarch
1/4 tsp salt
1 1/2 cups milk
3 egg yolks, beaten
1 tbsp butter
3 tsp vanilla extract
Topping
2 cups whipping cream
1/2 cup confectioners’ sugar
1 tsp vanilla extract
3 pints fresh strawberries, sliced
Garnish: additional confectioners’ sugar
On a lightly floured surface, roll out each pastry sheet to a 9 inch square. Place on ungreased baking sheets. Bake at 350 for 30 minutes or until golden brown
Meanwhile, in a saucepan, combine next 3 ingredients and gradually add milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat. Stir in a small amount into the egg yolks; return all to pan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from heat; stir in butter and vanilla. Pour custard into a bowl; cover surface with plastic wrap and chill.
In a mixing bowl, beat cream, sugar and vanilla until soft peaks form. Place one pastry square on a serving platter. Top with custard, strawberries, sweetened whipped cream and second pastry. Dust with confectioners sugar. Refrigerate leftovers.
