Grilled - SWEET ONIONS WITH HERB VINAIGRETTE

4 large sweet onions
Salt and pepper to taste

Fresh Herb Vinaigrette
1/4 cup balsamic vinegar
1 tbsp chopped fresh parsley
1 tbsp chopped fresh basil
1 tbsp chopped fresh thyme
1/2 tsp salt
1/4 tsp pepper
1/4 cup olive oil

Preheat grill to 350 to 400 (medium-high). Cut onions into 1/2-inch-thick slices. Brush with 2 Tbsp. Fresh Herb Vinaigrette. Grill onions, covered with grill lid, 10 minutes on each side or until crisp-tender. Sprinkle with salt and pepper to taste. Serve with remaining Fresh Herb Vinaigrette, if desired.

Fresh Herb Vinaigrette: Whisk together balsamic vinegar, parsley, basil, thyme, salt, and pepper. Gradually whisk in olive oil, whisking until vinaigrette is smooth. Serves 8
