* BBQ SPARERIBS*

4 lbs spareribs, trimmed of excess fat
Sauce
2 (8 oz) can tomato sauce
1/3 cup packed brown sugar
3 tbsp chopped onion
1/4 cup soy sauce
1 tsp dry mustard
1/2 cup chili sauce
1/4 cup dark rum and Worcestershire sauce
1 clove garlic, minced
Juce from 2 lemons
1/3 cup olive oil
1/2 tsp pepper
Combine sauce ingredients and simmer for 10 minutes. Brush ribs with sauce and place on a grill. Grill, about 4 inches from coals, turning frequently and brushing every few minutes for sauce, for 1 to 1 1/2 hours or until ribs are brown and done. Serves 4
NOTE: Ribs can be baked in double thickness foil for 1 1/2 hours; unwrapped and drained. Marinate ribs in sauce at room temperature for 1 hour and bake, uncovered for an addition 30 minutes, basting with sauce.
