BROCCOLI CHARDONNAY SOUP

1 lb broccoli, roughly cut into small portions
2 tbsp white onions, chopped
2 green onions, roughly chopped
1/4 cup small diced carrots
1 tbsp chopped fresh garlic
1 large apple, peeled, seeded and roughly chopped
4 cups chicken stock
3/4 cup chardonnay wine
¼ tsp cayenne pepper
Salt and white pepper, to taste
1/2 cup heavy cream
2 tsp tarragon

Sweat garlic and white onion in oil for 1 minute. Add the next 4 ingredients and sauté 1-2 minutes. Add stock and wine and bring to a boil. Reduce to a simmer and cook for 10 minutes. Puree the soup in a food processor until all is pureed. Return to pot. Season with cayenne pepper, white pepper, salt and cream. Bring to a boil and simmer 5 minutes. Garnish bowls of soup with tarragon.
