FRIED APPLE RINGS

1 cup baking mix
1 tsp cinnamon
1 egg
1/2 cup milk
2 medium apples, pared and cored

Combine first 5 ingredients and mix until smooth. Slice apples crosswise into 1/8 inch rings. Dip rings in batter. Bake on a hot greased griddle until golden brown, turning once. Can be served with syrup, preserves or sprinkled with confectioners’ sugar.
