PROSCUITTO WRAPPED PRAWNS

12 tablespoons herbed Goat cheese
1 teaspoon red pepper flakes
2 teaspoons roasted garlic
Salt and pepper
12 large prawns(under 16 count), peeled, tail-on, deveined and butterflied
12 thin slices of proscuitto
2 tablespoons olive oil

Season the prawns with salt and pepper.
dd red pepper flakes and roasted garlic to goat cheese or flavor to suit your tastes.

Press one tablespoon of the herbed goat cheese in the cavity of each prawns.

Wrap each prawn tightly with one piece of proscuitto.

In a saute pan heat the olive oil. When the oil is hot, sear wrapped prawns for 2 to 3 minutes on each side, or until the prawns turn pink. Garnish with chopped parsley and serve. Serves 4

NOTES: You may add spices and flavorings to goat cheese to suit your tastes-remember, a light touch is best.
