SEAFOOD SORRENTO

1 tomato, peeled and diced
1 cup sliced mushrooms
1/2 cup chopped green or red bell pepper
1/4 cup chopped onion
1 tbsp dried oregano
Salt and pepper, to taste
1 lb flounder or sole fillets
2 tsp cornstarch
1/4 cup dry white wine
Combine in a skillet the vegetables with the seasonings. Simmer, uncovered, for 1 minute. Arrange fish in a single layer on top; cover and simmer until fish flakes easily, about 4-5 minutes. Carefully remove with spatula.
Combine cornstarch with wine, stirring to blend. Pour into the skillet over low heat until sauce simmers, stirring until smooth. Spoon sauce over fish. Serves 4
