MASHED POTATO CASSEROLE

3 1/2 cups water
1/2 cup butter, melted
1 tsp salt
1/2 tsp black pepper
3 1/2 cups instant potato flakes
1 small onion, finely chopped
1 1/2 cups shredded sharp Cheddar cheese
1 cup (1/2 pint) heavy cream

Preheat the oven to 350. Coat an 8-inch square baking dish with nonstick cooking spray.

In a large saucepan, combine the water, butter, salt, and pepper; bring to a boil over high heat. Remove the saucepan from the heat and stir in the potato flakes and onion; mix well.

Spoon into the baking dish then sprinkle with the cheese and pour the cream over the top. Bake for 35 to 40 minutes, or until heated through and the edges are golden. Serves 4-6
