LEMON ROASTED POTATOES

2 tbsp olive oil
1 tbsp unsalted butter
2 lb Yukon gold potatoes, peeled
1/2 cup lemon juice
1 tsp finely chopped fresh thyme
1/2 tsp kosher salt
1/4 tsp pepper
Preheat oven to 400. In a 12 inch saute pan, heat the oil and butter together until butter is golden brown. Add the potatoes and toss lightly so all sides are coated. Transfer to a baking dish. Bake until tender when pierces with a knife, about 30 minutes. Turn the potatoes so they get brown on all sides. Sprinkle with remaining ingredients. Toss and serve hot. Serves 4
