CHOCOLATE PEANUT BUTTER CUP COOKIES

1 1/2 cups packed brown sugar
2/3 cup shortening
1 tbsp water
1 tsp vanilla
2 eggs
1 1/2 cups flour
1/3 cup cocoa
1/4 tsp baking soda
1/2 tsp salt
2 cups miniature peanut butter cups, unwrapped and quartered or coarsely chopped

Preheat oven to 375. Place sheets of foil on countertop for cooling cookies. Combine first 4 ingredients in a bowl. Beat until well blended. Beat in eggs, one at a time.

Combine dry ingredients and mix into creamed mixture just until blended. Stir in peanut butter cups. Drop by rounded tbspfuls of dough 2 inch apart onto greased baking sheet. Bake for 7-9 minutes or until cookies are set. DO NOT OVERBAKE. Cool 2 minutes on baking sheet. Remove cookies to foil; cool completely.
