APPLE SQUARES

3 cups flour
3/4 tps salt
1/2 tsp baking powder
5 tbsp unsalted butter
2/3 cup shortening
1 egg yolk
1/3 cup milk
1 cup crushed corn flakes
1/2 cup sugar
1/3 cup brown sugar
1/4 cup flour
1 tsp ground cinnamon
8 large peeled and cored tart apple
1/4 cup chopped walnuts and raisins
3 tbsp butter, melted

Lightly grease a 13x9 inch baking pan. In a large bowl, combine dry ingredients. Cut in butter and shortening until size of peas. Blend yolk and milk together. Gradually add to flour mixture, mixing with a fork. When dough comes together, divide it in half. Wrap and refrigerate for 1 hour.

Adjust oven rack to lower third of oven. Preheat oven to 425. Lightly grease a jelly-roll pan. Roll out half dough; fit into pan. Sprinkle with cornflakes. Combine sugars, flour and cinnamon. Sprinkle over apples, nuts and raisins and toss to combine. Add melted butter. Again toss to combine. Arrange apple slices over corn flakes. Roll out remaining half of dough to fit top. Place over apples and seal edges. Make several slits on top with a paring knife to allow steam to escape. Bake 20 minutes, then reduce heat to 375. Bake an additional 30-40 minutes or until golden. Spread glaze on bars while warm. Cool slightly before cutting.

Glaze: Combine 1 cup confectioners sugar with 5 tsp lemon juice and 1 tsp vanilla extract until well blended.
