GRILLED CORNED BEEF

1 (4 lb) corned beef brisket
1 small onion, peeled and studded with 4 cloves garlic
1 clove garlic, minced
1 tbsp pepper
2 tsp dried mustard
2 bay leaves

Place brisket in hot heavy pot and cover with hot water. Add remaining ingredients and bring to a boil. Reduce heat, cover and simmer very gently for 3 hours or until beef is tender. Drain and dry brisket. (This can be done one day in advance and refrigerated.)

Place brisket in a foil pan, fat side up. Position pan in center of cooking grate and cook about 40-50 minutes to warm through.
