HONEY MUSTARD SALMON
Category: Seafood and Fish - Grilled
1 tsp dill weed dried, crumbled
2 tbsp Dijon mustard or any other good-quality mustard
1 tbsp honey
6 salmon fillets (about 4 oz each)
Vegetable oil spray (optional)
Preheat the grill on high or preheat the broiler to 450. In a small bowl, whisk together the dill weed, mustard and honey. Rinse the salmon and pat dry with paper towels. Brush the mustard mixture all over the flesh side of the salmon.
If broiling the fish, spray a baking sheet with vegetable oil spray. Put the fish skin side down on the grill or baking sheet. Grill or broil about 6 inches from the heat for about 6 minutes, or until the fish is barely translucent at its thickest part and the sides are beginning to flake when tested with a fork. The fish will cook a little more after you remove it from the heat.
