CHICKEN WITH HERB MAYONNAISE DIPPING SAUCE

1/2 cup olive oil
1 tsp minced garlic and pepper
4 boneless, skinless chicken breasts

Combine first 3 ingredients. Add chicken and marinate for 30 minutes. Grill about 3 minutes per side being careful not to overcook. Cool and cut into bite-size pieces. Serve with dipping sauce.

Herbed mayonnaise
3/4 cup mayonnaise
2 tbsp lemon juice
1/4 cup finely minced fresh herbs, rosemary, parsley and basil

Combine ingredients. Serve as a sauce or sandwich condiment. Makes 3/4 cup.
