CARRIBBEAN JERK CHICKEN

1 envelope dry Italian seasoning dressing mix
2 tbsp brown sugar, oil and soy sauce
1 tsp ground cinnamon and thyme
1/2 tsp ground red pepper
2 1/2 lb chicken pieces

Mix all ingredients except chicken in a small bowl until well blended. Pour over chicken and cover. Refrigerate 1 hour to marinate. Drain, discard dressing mixture.

Place on greased grill over hot coals 5-7 inch from heat. Grill or broil 40-45 minutes or until chicken is cooked through, turning frequently. Serves 6-8
