1 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cups unsalted butter, softened
1 cup sugar
2 eggs
1/2 tsp vanilla extract
2 oz unsweetened chocolate, melted
1 cup flaked coconut
1/2 cup pecans, chopped
3/4 cup chocolate chips
About 60 pecan halves
Preheat oven to 350. Line cookie sheets with parchment paper.
On a piece of wax paper, combine dry ingredients.
In a bowl, cream butter and add sugar. Beat until fluffy. Beat in eggs and vanilla, then add the melted chocolate; beat well. Add the dry ingredients, mixing until smooth, then stir in the coconuts, pecans and chips.
Drop dough by tbspfuls 2 inch apart onto an ungreased cookies sheet. Bake for 10-13 minutes. Transfer to wire racks to cool. Store in airtight containers or freeze.
