CHOCOLATE CHUNK PECAN COOKIES

10 tbsp butter, room temperature
2/3 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp vanilla
1 1/2 cups flour
3 (3 oz) bars Swiss dark chocolate
2/3 cup coarsely chopped pecans

Preheat oven to 325. Lightly grease cookie sheets.

In a large bowl, beat butter, sugars, egg and vanilla until fluffy. Reduce mixer speed and add flour, increasing speed gradually until just blended. Stir in chocolate and pecans.

Drop heaping tbsp dough 2 1/2 inch apart onto cookie sheets. Bake about 17 minutes. Cool on sheet on wire rack 5 minutes. Remove to rack to cool completely.

VARIATION:
Mint Chocolate Cookies – Add 2 oz unsweetened chocolate, melted, to butter mixture. Instead of dark chocolate use mint chocolate chips. Delete nuts.
