WALNUT CHUCKEN PINWHEELS

2 boneless, skinless chicken breasts, halved
12-14 spinach leaves
1 (6.5 oz) pkg Alouette Garlic and Herbes Cheese
5 oz roasted red peppers, sliced or 5 oz jar sliced pimentos
3/4 cup finely chopped walnuts

Pound chicken about 1/4 inch thinness with flat side of meat mallet. Cover each chicken piece with spinach leaves. Spread with cheese and top with pepper slices and nuts. Carefully roll up each breast and secure with toothpicks. Bake at 400 for 20-25 minutes or until cooked through. Remove from oven; cool. Chill. Remove toothpicks before serving and then slice into 1/2 inch rounds. Serve cold.
