OREO CAKE

Cake:
25 chocolate sandwich cookies, quartered
3 cup flour
1 1/4 cups milk
1 1/2 cups sugar
1 cup butter
2 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla
4 large eggs

Glaze:
6 oz pkg semi-sweet chocolate chips
1 cup confectioners sugar
1 tbsp milk and corn syrup

Preheat oven to 350. Spray a Bundt pan with cooking spray. In a large bowl, beat flour and remained cake ingredients until blended. Increase speed to high; beat for 2 minutes, scraping bowl a few times. Spoon about 3/4 cup of the batter into pan. Gently stir cut up cookies into remaining batter and spoon into same pan. Bake 50 minutes or until cake springs back when lightly touched. Cool on wire rack for 10 minutes; remove from pan and cool completely on rack. When cake is cool, prepare glaze.

To make the glaze: In a saucepan over low heat, melt the ingredients and stir until smooth. Pour over cake.

MEXICAN CHICKEN FILLING - Crock pot - Easy
2-4 frozen boneless, skinless chicken breasts
2 can flavored stewed tomatoes, any flavor

Place chicken in crock pot, cover with tomatoes and cook on HIGH for 2 hours and then turn down to LOW for 6 hours Check to make sure chicken stays covered by liquid so that they will stay tender.

NOTE: Use with served over rice but also good shredded or chopped for taco and burritos.
