HERBED SOLE FILLETS

1/3 cup butter
1/4 tsp each onion salt, dried oregano, dried parsley flakes, dried tarragon, pepper and minced garlic
4 fillets of sole
3 tbsp dry sherry
Melt butter in a large skillet; add next 7 ingredients and saute over medium heat for 1 minute. Reduce heat to low, add fish. Cook for 3 minutes; turn and cook an additional 2-3 minutes or until fish flakes easily. Remove fish with a slotted turner; place on heated platter and keep warm. Pour sherry into skillet; cook over high heat for 30-45 seconds. Pour sherry mixture over fish; serve immediately. Serves 4
