HALIBUT FILLET WITH CRABMEAT STUFFING

4 (7 ounce each) boneless Halibut fillets
2 large potatoes, thinly sliced
1/2 ounce olive oil
1 pound crabmeat
1/4 cup white onion
1/2 cup red, yellow and green peppers, diced
1/3 cup vegetable oil
1/2 cup lemon juice
2 tbsp. Dijon mustard
2 egg yolks
1/4-cup bread crumbs
1 tsp. dill, chopped
1 tsp. scallion, sliced
Salt and pepper
2 cups water
Saute fish with oil in a pan. Place fish in oven that has been preheated to 350 degrees for 7 minutes.
Place oil, onions, and peppers into saucepan over medium heat. Mix crabmeat, egg yolks, Dijon, lemon juice, and oil mixture into
a bowl and whisk. Fold in dill, scallion and breadcrumbs. Take crabmeat and place on top of fillets.
For potatoes, thinly slice and peel potatoes. Brush with olive oil and bake at 350 oven for 3 minutes to soften.
