MAPLE PECAN COOKIES WITH WHITE CHOCOLATE CHIPS
Cookies:
1 cup shortening
1/2 cups butter
2 cups brown sugar
2 whole eggs
1 tsp vanilla
1 tsp maple extract
3 cups flour
2 tsp baking soda
2 cups white chocolate chips
1/2 cups chopped pecans
Frosting:
1/4 cups soft butter
4 cups confectioners sugar
1 tsp maple flavoring
3 tbsp milk
1-1/2 cup pecan halves
Cookies: In a large bowl; cream the shortening, butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla and maple flavoring. Combine flour and baking soda; gradually add to the creamed mixture. Stir in white chocolate chips and chopped pecans.
Drop by tbspfuls 2 inches apart onto ungreased baking sheets. Bake at 350 F for 9-12 minutes or until golden brown. Cool for 2 minutes before removing to wire racks.
Frosting: In a bowl; cream the butter, confectioners sugar, maple flavoring and enough milk to achieve spreading consistency. Frost each cookie with 1 tsp of frosting; top with a pecan half.
