* ITALIAN CREAM CAKE*

1 yellow white cake mix with pudding
3 large eggs
1 1/4 cups buttermilk
1/4 cup vegetable oil
1 (3 1/2 oz) can flaked coconut
1 2/3 cups chopped pecans, toasted and divided
3 tbsp rum
2 (12 oz) containers cream cheese frosting

Preheat oven to 350. Beat first 4 ingredients for 2 minutes. Stir in coconut and 2/3 cup pecans. Pour into 3 greased and floured 9 inch round cake pans. Bake for 15-27 minutes. Cool in pans on wire rack 10 minutes. Remove from pans and cool completely on wire racks.

Sprinkle cake layers with rum; let stand 10 minutes. Stir together frosting and remaining 1 cups toasted pecans.. Spread frosting between layers and on tp and sides of cake. Chill at least 2 hours before slicing.
