FRESH ASPARAGUS SALAD

2 lb fresh asparagus
1/4 cup olive oil
2 tbsp balsamic vinegar
1 tbsp lemon juice
2 tsp chopped fresh chives
1 tsp Dijon mustard
1/4 tsp salt and pepper
1 shallot, chopped
1 hard-cooked egg, chopped
Snap off tough ends of asparagus. Cook in boiling salted water to cover 2-3 minutes or until crisp-tender; drain. Plunge asparagus into ice water to stop cooking process; drain and set aside.
Whisk together next 8 ingredients. Drizzle asparagus with vinaigrette and sprinkle with chopped egg. Serves 6
