FRENCH POTATO SALAD

7 potatoes, approximately 2 lbs
1 tsp tarragon, chopped
1/4 cup red onion, chopped
1/2 cup white wine, dry
2 tbsp shallots, chopped
1/2 cup extra virgin olive oil
1/2 tsp garlic, chopped
2 tbsp wine vinegar
1/4 cup parsley, chopped
freshly ground black pepper to taste
1/4 tsp red pepper flakes

Rinse the potatoes but do not peel them. Put them in a large saucepan. Add cold water to cover and bring to the boil. Simmer for about 20 to 30 minutes, or until tender. Cool.

Once cool, cut the potatoes in half lengthwise. Cut each half into thin slices. Place in a bowl and set aside. Whisk together remaining ingredients and pour over potatoes. Stir gently.
