CHERRY PISTACHIO COOKIES

1 1/2 cups butter, softened
2 cups sugar
4 eggs
1 tsp vanilla extract
5 cups flour
2 tsp baking powder
1 tsp salt
1/2 cup each chopped dried cherries and chopped pistachios.

In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs and vanilla. Stir in the flour, baking powder and salt. Cover and chill the dough for at least one hour (or overnight).

Preheat the oven to 400. Roll out dough on floured surface to 1/2 inch thick. Cut into small circles. Place the cookies 1 inch apart on ungreased cookie sheets.

In a small bowl, combine dried cherries and chopped pistachios. Cover the surface of each cookie, pressing in lightly. Bake for 10 to 12 minutes, or until golden brown. Cool completely. Makes about 5 dozen.
