TURKEY CHILI - Easy

2 lbs ground turkey
1 medium onion, chopped
1 tsp minced garlic
2 (15-oz) cans Mexican-style chili beans
2 (15-oz) cans red kidney beans or black beans, drained
1 (46-oz) can of V8 juice
1 (28-oz) can of diced tomatoes
1 1/2 tsp salt
1/2 tsp pepper
1 1/2 tsp dried cumin
1 tsp dried basil
2 tbsp chili powder
For serving: grated cheese, Fritos, sour cream, steamed rice
Combine ground turkey, chopped onion and garlic in large soup pot and cook on medium heat, stirring, until onions are soft and turkey is done. Add the rest of the ingredients and simmer for at least 2 hours. Serve with cheese, chips, sour cream or steamed rice. Makes 8 to 10 servings.
Note: Add 1 or 2 cans of pinto beans with jalapeno if you like it hot, or substitute 2 cans of Ro-Tel tomatoes for diced tomatoes.
