DILLED POTATO SALAD

Salad
4 medium red pepper, peeled and diced, boiled to fork-tender
4 hard-cooked eggs
1/2 cup sliced green onions
3 tbsp chopped fresh dill
1/2 tsp salt
1/4 tsp pepper

Dressing
3/4 cup mayonnaise
1/3 cup milk
1 tsp white wine vinegar
1/2 tsp yellow mustard

Drain cooked potatoes in cold water until cool. In a large mix potatoes and remaining salad . In a medium bowl, mix dressing. Pour dressing over salad; mix well. Refrigerate 1 hour to blend flavors.
