COLD SPIRAL PASTA SALAD WITH PEAS AND FETA CHEESE

8-10 oz pkg rotelle or rotini, cooked al dente, rinsed and cooled
1 medium zucchini, halved lengthwise and thinly sliced
3 tbsp olive oil and white balsamic or white wine vinegar
1 tsp dried oregano
2/3 cup crumbled feta cheese
1 cup steamed fresh or thawed frozen green peas
2 medium firm, ripe tomatoes, diced
2 scallions, finely chopped
1/4 - 1/2 cup chopped fresh parsley
Salt and pepper, to taste

While pasta is cooking, combine remaining ingredients. Add cooled pasta, cover and refrigerate or serve at once. Serves 6
