5 cups cooked chicken, cut in chunks
3 cups cooked long grain rice
2 tbsp vegetable oil, vinegar and orange juice
1 1/2 cups thinly sliced celery and green grape
1 (13 1/2 oz) can pineapple tidbits, drained
1 (11 oz) can mandarin oranges, drained
1/2 cup slivered almonds, toasted
3/4 cup plain yogurt and mayonnaise
1 tsp salt
Garnish, 1/2 cup slivered almonds, toasted
In a mixing bowl, combine first 5 ingredients and toss to lightly mix; set aside. In a large bowl, combine remaining ingredients. Add chicken mixture; blend well. Garnish with almonds. Serves 12
