CHICKEN AND PASTA SALAD WITH FETA CHEESE

1/2 lb penne pasta, cooked al dente
1/4 cup olive oil
2 tbsp white wine vinegar
1/2 tsp garlic, minced
2 tbsp basil, chopped
2 medium tomatoes, diced
1/2 cup crumbled feta cheese and pitted black olives
8 cups spinach, rinsed and stemmed
1 1/2 lb boneless, skinless chicken breasts, grilled and diced
Garnish: additional crumbled feta cheese and thinly sliced red onion

While pasta is cooking, whisk together first 4 ingredients. Toss with drained pasta. Add next 3 ingredients. Chill for 1 hour. Arrange spinach on platter and top with pasta salad. Add chicken. Garnish with additional feta and thinly sliced red onions. Serves 4
