HERBED CHEESE

1/4 lb jack or white cheddar cheese, shredded
1/4 cup grated parmesan cheese
1 (8 oz) pkg cream cheese, softened
1 1/4 tsp butter, softened
1/2 tsp dried marjoram, crushed
1/4 tsp dried tarragon, crushed
1 tsp grated lemon rind
Juice of 1/2 lemon
1/3 cup Chablis or other dry white wine

Blend cheeses with butter in a large bowl until creamy and smooth. (You may have to add a little of the wine to loosen the mixture so it will beat more easily. Mix spices and lemon rind in a small bowl then add to cheese mixture. Gradually beat in lemon juice and wine. Turn into bowl or small lightly oiled mold and chill thoroughly. Serve with crackers and fresh fruit.
