ARTICHOKE PASTA SALAD

12 oz rotini pasta, cooked al dente
1 (14 oz) can artichoke hearts in water, drained and chopped
2 fillets anchovies
1 large tomato, chopped
2 oz sliced black olives
4 oz crumbled feta cheese
1/2 cup olive oil
2 tbsp red wine vinegar
1/2 tsp dried Italian seasoning and black pepper
1/4 cup chopped parsley
While pasta is cooking, place artichokes in a large bowl. Press anchovies between several paper towels to remove most of oil. Finely mince and add to artichokes. Add remaining ingredients. Drain and rinse pasta and add to bowl. Toss well to mix. Serve immediately. Serves 6
