GARLIC CRUSTED PORK LOIN

Category: Roasts/Tenderloins - Pork

3 large clove garlic, minced
2 tsp salt
1 bay leaf, crumbled
1 tsp each rubbed sage and dried thyme
1/2 tsp pepper
1 (3 lb) loin roast, rolled and tied

Combine first 6 ingredients and rub mixture evenly over the roast. Cover and refrigerate overnight, turning pork occasionally.

Preheat oven to 350. Place rack in roasting pan and place pork on top. Roast about 1 hour and 25 minutes or until internal temperature registers 160 degrees. Allow to rest before slicing.
