1/2 to 1 lb ripe brie, rind removed and cut into pieces
1/2 cup olive oil
Fresh basil, cut into strip to equal about 1 cup
4-6 cloves garlic, minced
4 tomatoes, seeded and chopped
1/2 tsp salt
3/4 tsp pepper

Combine ingredients in a large bowl and let stand for 2 hours at room temperature. Serves 4-6

NOTE: Toss in cooked pasta (I use penne) and sometimes add a couple of ladels hot pasta water to help combine and melt the cheese a little. I then sprinkle with parmesan cheese before serving.
