CATFISH COCKTAIL

1 lb catfish fillets, cut into 1 inch cubes
2 cups chicken broth
1 (8 oz) bottle lime juice, chilled
1/3 cup thinly sliced celery
6 tbsp chopped onion
2 tbsp chopped green pepper
1 tbsp chopped fresh parsley
1 cup chili sauce, chilled
2 tbsp prepared horseradish
Red pepper sauce, to taste
1 avocado, peeled and diced
Lettuce
Heat broth to a boil; reduce heat and add fish. Cook 3-5 minutes or until fish flakes easily with a fork. Drain well. Place in a glass bowl. Pour cold lime juice over fish. Cover and refrigerate for 30 minutes. Combine celery and next 6 ingredients. Mix well; set aside. Drain fish. Add fish and avocado to sauce mixture; toss gently. Serve on lettuce. NOTE: This can be prepared ahead and refrigerated. Makes 6 appetizers.
