SPICY SHRIMP DISH

2 tbsp butter
1 red bell pepper, coarsely chopped
1 large onion, chopped
1 cup thinly sliced celery
1 (26 1/2 oz) can marinara sauce
1 (10 oz) can diced tomatoes and green chilies
1 lb large shrimp, peeled and deveined

In a Dutch oven, melt butter and stir in vegetables; cover and cook 5 minutes, stirring occasionally.

In a medium saucepan, combine sauce and tomatoes. Heat, covered, until boiling. Reduce to simmer and add shrimp and vegetables and increase heat to high. Cook 2-3 minutes, tossing, until shrimp are pink. Add sauce and stir will and return just to a simmer. Serve over pasta or rice. Serves 6
