TENDER ROASTED PARSNIPS

2 lb parsnips, scraped
1/4 cup unsalted butter, melted
2 tsp grated lemon rind and lemon juice
1/2 tsp salt and white pepper
2-3 tbsp minced fresh parsley

Cut parsnips into 1/2 inch slices and place in a lightly greased 13x9 inch baking pan. Drizzle with butter; stirring to coat. Bake at 350 for 30-45 minutes or until tender. Stir together lemon rind and next 4 ingredients; pour over parsnips, stirring to coat. Serve immediately. Serves 8
