INTENSE APPLESAUCE

5 cups apple cider
5 large cooking apples, peeled, cored and cut into chunks
3 tbsp packed brown sugar and butter
1 tsp cinnamon

Boil cider until reduced by half. Add apples and lower heat. Simmer, covered, for about 40 minutes, stirring occasionally to prevent sticking. Add sugar, butter and cinnamon; blend until sugar is dissolved. Mash with a potato masher, leaving some chunks. If sauce is to thin, continue cooking over low heat until thickened.
