OLD FASHION GRAHAM CRACKER PIE

4 tbsp butter, at room temperature, divided
1 cup plus 3 tbsp sugar, divided
1 tsp ground cinnamon
9 whole graham crackers, crushed
3 eggs, separated
2 cups milk
2 tbsp cornstarch
1 tsp vanilla
Preheat the oven to 350. Beat 2 tablespoons butter, 1/2 cup sugar and cinnamon until fluffy. Add graham cracker crumbs and mix well. Press 2/3 of the mixture into the bottom and up the sides of a slightly greased 8-inch or 9-inch pie plate, reserving the remaining 1/3 of the crumbs for the top of the pie.
To make the filling, combine egg yolks, milk, 1/2 cup sugar, cornstarch and the remaining 2 tablespoons butter in the top of a double boiler. Cook over simmering water until slightly thickened and the consistency of pudding, stirring frequently. Remove from heat; add vanilla. Pour into the prepared crust.
Beat egg whites until stiff, gradually beating in the remaining 3 tablespoons sugar. Spread over the custard filling. Sprinkle with the reserved graham cracker crumbs. Bake for 30 minutes or until meringue is golden. Let pie cool before cutting.
