BUTTER-GLAZED SUMMER VEGETABLES

1 tbsp cooking oil
2 small zucchini and yellow squash, thinly bias-sliced
2 cups broccoli flowerets
3/4 tsp dried oregano and basil, crushed
1/4 tsp salt
1/8 tsp pepper
1 medium tomato, chopped
1 tbsp butter
Pour cooking oil into a large skillet. Add more oil as necessary during cooking. Preheat over medium-high heat. Stir-fry zucchini and squash for 3-4 minutes or until crisp-tender. Remove vegetables from skillet. Add broccoli and seasonings. Stir-fry for 2-3 minutes or until crisp tender. Return zucchini and squash. Add tomato and butter. Stir-fry just until butter is melted. Serve immediately. Serves 6
