2 tbsp butter
1/2 cup diced onion
1 clove garlic, minced
1 cup thinly sliced carrots and celery
Dash red pepper
2 tbsp flour
2 cups milk and water
2 tsp instant chicken bouillon
4 medium potatoes, cubed
4 oz American, cheddar or Velveeta cheese
2 frankfurters or smoked sausage, thinly sliced
Dash pepper and paprika

In a large saucepan, melt butter and add vegetables. Cook stirring frequently for 2-3 minutes. Sprinkle pepper and flour over vegetables, stirring quickly to combine for 1 minute. Gradually add milk, stirring constantly. Add water and bouillon and potatoes; bring just to a boil. Reduce heat and simmer for 10 minutes. Add frankfurters and cheese, stirring until cheese is melted. Add pepper and paprika. Cook until heated through. Serves 4
