WILTED CABBAGE SALAD

1 medium head cabbage, shredded
5 bacon strips, cooked and crumbled
3 tbsp red wine vinegar
Salt and pepper, to taste

Place cabbage in a large bowl and cover with boiling water. Let stand for 10 minutes and drain. Pat dry with paper towels. Drain all but 2 tbsp bacon grease from skillet and add vinegar, salt and pepper. Mix thoroughly and toss with cabbage. Crumble bacon over cabbage. Serves 6
