2 cups wild rice
3 cups broccoli florets
1 large carrot, coarsely grated
1 tbsp lemon rind
1/3 cup red onion, minced
1/2 cup parsley, minced
1/2 cup walnuts, chopped

Dressing
3 tbsp olive oil
2 tbsp lemon juice
1 tsp honey or maple syrup and Dijon mustard
1/8 tsp pepper

Cook rice according to pkg directions; set aside and let cool. Cook broccoli until crisp; set aside and let cool. Place rice, broccoli and remaining salad ingredients in a bowl and gently toss until combined.
In a separate bowl, combine dressing ingredients and mix well. Add dressing to salad mix until desired taste is achieved.
